Cranberry Pistachio Snowball Cookies: Festive Treats For All

Ingredients

– 1 cup unsalted butter, softened
– ½ cup powdered sugar
– 1 teaspoon vanilla extract
– 2 cups all-purpose flour
– ½ cup finely chopped pistachios
– ½ cup dried cranberries, chopped
– ½ teaspoon salt
– Extra powdered sugar for coating

Method

1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
2. In a large bowl, mix the softened butter with the powdered sugar until smooth.
3. Stir in the vanilla extract, salt, and flour until combined. Then add the chopped pistachios and cranberries.
4. Roll small balls of the dough, about 2.5 cm each, and place them onto the prepared tray.
5. Bake for 12-15 minutes, then let cool for a few minutes before rolling in extra powdered sugar.
