Ingredients
– 1 cup unsalted butter, softened
– 1/2 cup powdered sugar
– 1 teaspoon vanilla extract

– 1/2 cup dried cranberries, chopped
– 1/2 cup pistachios, chopped
– 1/2 cup powdered sugar (for rolling)
Method
1. Preheat the oven to 180°C. Line a baking tray with baking paper.
2. In a mixing bowl, cream the softened butter and 1/2 cup powdered sugar until smooth.
3. Add vanilla extract, then mix in the flour and salt until fully combined.
4. Stir in the chopped cranberries and pistachios until evenly distributed.
5. Roll the dough into small balls, place them on the baking tray, and bake for 10 to 12 minutes. Allow to cool and roll in powdered sugar before serving.
