Ingredients

  • 250 g unsalted butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups plain flour
  • 1 cup rolled oats
  • 1 cup dried cranberries, chopped
  • 1 teaspoon cinnamon
  • 1 egg, beaten
  • 1 cup icing sugar
  • 2 tablespoons water

Method

1. Preheat the oven to 180 degrees Celsius. Line a baking tray with baking paper.
2. In a bowl, cream together the softened butter and sugar until fluffy. Stir in the vanilla extract.
3. Mix the plain flour, rolled oats, cinnamon, and cranberries into the butter mixture until combined.
4. Roll the dough into a log shape and wrap it in plastic wrap. Chill in the fridge for about 1 hour.
5. Slice the chilled dough into thin rounds and bake for 10-12 minutes until golden. Allow to cool before icing with a mixture of icing sugar and water.
