Ingredients
– 1 kg chicken thighs, skinless and boneless
– 1 onion, chopped
– 2 cloves garlic, minced
– 300 ml chicken broth
– 1 tablespoon olive oil
– 1 teaspoon dried thyme
– 1 teaspoon smoked paprika
– 200 g spinach, fresh
– 250 ml cream
– Salt and pepper to taste
Method
1. Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until soft.
2. Stir in the garlic and cook for another minute. Then, add the chicken thighs and brown them on both sides.
3. Pour in the chicken broth and add thyme, smoked paprika, salt, and pepper. Let it simmer for 15 minutes.
4. Add the fresh spinach and cook until wilted. Then stir in the cream until well combined.
5. Serve the chicken and sauce over rice or pasta.
