Ingredients
– 450 g diced ham
– 1 can (400 g) cannellini beans, rinsed and drained
– 1 can (400 g) diced tomatoes
– 1 onion, chopped
– 2 carrots, diced
– 2 celery sticks, diced
– 1.2 L chicken broth
– 1 tsp dried thyme
– Salt and pepper to taste
– Olive oil
Method
1. Heat a large pot over medium heat and add a drizzle of olive oil.
2. Sauté the onion, carrots, and celery for about 5 minutes until softened.
3. Stir in the diced ham and cook for another 3 minutes.
4. Add the cannellini beans, diced tomatoes, chicken broth, and thyme. Season with salt and pepper.
5. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
