Ingredients
- 500g cream cheese
- 1 cup sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 cups cherries (fresh or canned)
- 400g digestive biscuits
- 100g butter, melted
- 1 cup whipped cream
- 1 tsp lemon juice
- 1 pinch salt
Method
- Preheat the oven to 180°C.
- Crush the digestive biscuits in a bowl. Combine them with melted butter and mix well.
- Press the biscuit mixture into the base of a springform pan.
- In a separate bowl, beat the cream cheese with sugar, sour cream, vanilla extract, lemon juice, and a pinch of salt until smooth.
- Spread the cream cheese mixture over the biscuit base, then top with cherries and whipped cream. Chill before serving.
