Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 500 g chicken breast, diced
– 1 carrot, sliced
– 1 celery stalk, sliced
– 1 teaspoon dried thyme
– 4 cups chicken broth
– 400 g gnocchi
– 2 cups baby spinach
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until soft, then stir in the minced garlic.
3. Include the diced chicken, sliced carrot, and celery. Cook until the chicken is no longer pink.
4. Sprinkle in the dried thyme, and then pour in the chicken broth. Bring the mixture to a boil.
5. Lower the heat, add the gnocchi and baby spinach, and cook until the gnocchi float.
