Citrus Shrimp Avocado Salad: Refreshing, Healthy Recipe Delight

Ingredients

– 500 g large shrimp, peeled and deveined
– 2 tbsp olive oil
– 1 tsp minced garlic
– 1 tsp lime juice
– 1 tsp lemon juice
– 1 tsp salt
– 1 ripe avocado, diced
– 1 cup cherry tomatoes, halved
– 1/2 cup cucumber, diced
– Fresh cilantro for garnish

Method

1. Heat a large skillet over medium heat and add olive oil.
2. Once oil is hot, add minced garlic and sauté for about 30 seconds.
3. Next, add shrimp, lime juice, lemon juice, and salt. Cook until shrimp turn pink, about 3-4 minutes.
4. In a bowl, combine diced avocado, cherry tomatoes, and cucumber.
5. Serve the shrimp on top of the salad mixture and garnish with fresh cilantro.
