Ingredients
– 450g large shrimp, peeled and deveined
– 2 ripe avocados, diced
– 1 cup cherry tomatoes, halved
– 1 cup cucumber, diced
– 1/4 cup red onion, finely chopped
– 1/4 cup fresh cilantro, chopped
– 60ml lime juice
– 60ml olive oil
– Salt, to taste
– Pepper, to taste
Method
1. Start by cooking the shrimp in a pan over medium heat. Stir occasionally until they turn pink, about 3-4 minutes.
2. After cooking, remove the shrimp from heat and let them cool down.
3. Combine avocados, cherry tomatoes, cucumber, and red onion in a large bowl.
4. In another small bowl, mix lime juice, olive oil, salt, and pepper. Whisk until combined.
5. Pour the dressing over the salad mixture and add in the shrimp. Toss gently to combine all ingredients.
