Ingredients
– 4 salmon fillets
– 60 ml olive oil
– 60 ml red wine vinegar
– 2 cloves garlic, minced
– 1 cup fresh parsley, chopped
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon red pepper flakes
– Lemon wedges for serving
Method
1. Preheat the oven to 200°C.
2. In a bowl, mix together the olive oil, red wine vinegar, garlic, parsley, oregano, salt, black pepper, and red pepper flakes.
3. Place the salmon fillets on a baking tray lined with parchment paper.
4. Spoon the chimichurri sauce over each salmon fillet evenly.
5. Bake for 15-20 minutes until the salmon is cooked through. Serve with lemon wedges.
