Ingredients
– 2 cups cooked rice
– 400 g chicken breast, diced
– 1 cup diced bell peppers
– 1 cup diced onion
– 1 cup corn kernels
– 400 g diced tomatoes
– 1 cup shredded cheese
– 1 teaspoon taco seasoning
– 2 tablespoons olive oil
– Salt and pepper to taste
Method
1. Heat olive oil in a large pan over medium heat.
2. Add onions and bell peppers. Cook until soft, about 5 minutes.
3. Stir in diced chicken and taco seasoning. Cook until chicken is no longer pink.
4. Mix in cooked rice, corn, and diced tomatoes. Season with salt and pepper.
5. Sprinkle cheese over the top and cover the pan. Cook until the cheese melts.
