Ingredients

– 250 ml buttermilk
– 100 g butter, softened
– 200 g sugar
– 2 large eggs
– 1 tsp vanilla extract
– 250 g all-purpose flour
– 2 tsp baking powder
– 1/2 tsp salt
– 150 g blueberries (fresh or frozen)
– Additional sugar for sprinkling (optional)

Method

1. Preheat the oven to 180°C. Grease a square baking dish or line it with baking paper.
2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
3. Add the eggs and vanilla extract. Mix until well combined.
4. Gradually stir in the buttermilk, then incorporate the flour, baking powder, and salt. Mix until the batter is smooth.
5. Gently fold in the blueberries. Pour the batter into the prepared dish. If desired, sprinkle extra sugar on top before baking. Bake for 45-50 minutes or until golden brown.
