Ingredients
200 g burrata cheese
1 cup fresh cherries, pitted and halved
½ cup pistachios, shelled
40 ml olive oil
1 tablespoon lemon juice
Salt, to taste
Pepper, to taste
Fresh basil leaves, for garnish
Bread, for serving
Method
1. Start by making the pistachio pesto. Place the pistachios into a food processor.
2. Add olive oil, lemon juice, salt, and pepper to the food processor. Blend until smooth.
3. Slice the burrata and arrange it on a serving plate.
4. Scatter the halved cherries on top of the cheese. Drizzle the pistachio pesto over the cherries and burrata.
5. Garnish with fresh basil leaves and serve with bread on the side.
