Burrata With Asparagus And Pancetta: A Delicious Spring Delight

Ingredients

– 400g asparagus, trimmed
– 100g pancetta, cut into small pieces
– 250g burrata cheese
– 2 tablespoons olive oil
– 1 tablespoon balsamic vinegar
– Salt to taste
– Pepper to taste
– Fresh basil leaves, for garnish
– Lemon wedges, for serving

Method

1. Begin by heating a pan over medium heat. Add pancetta and cook until crispy, which will take about 4 to 5 minutes.
2. In a separate pot, bring water to a boil. Add asparagus and cook for 2 to 3 minutes until tender. Drain and set aside.
3. Arrange the asparagus on a plate. Place the burrata cheese in the centre of the asparagus.
4. Drizzle the cooked pancetta over the burrata and asparagus. Then, pour olive oil and balsamic vinegar on top.
5. Season with salt and pepper. Garnish with fresh basil leaves and serve with lemon wedges on the side.
