Ingredients

– 400 g pasta (any type you like)
– 250 g garlic and herb cheese
– 30 ml olive oil
– 1 cup cherry tomatoes, halved
– 1 cup baby spinach
– 1 cup chicken or vegetable broth
– Salt, to taste
– Pepper, to taste
– Parmesan cheese, for serving (optional)

Method

1. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving some pasta water.
2. Heat the olive oil in a pan over medium heat. Add the cherry tomatoes and sauté until they soften, about 5 minutes.
3. Stir in the baby spinach and cook until wilted. Add the garlic and herb cheese along with the broth. Mix everything together until creamy.
4. Combine the cooked pasta with the sauce in the pan. If it seems too thick, add a bit of reserved pasta water. Season with salt and pepper to taste.
5. Serve warm, topped with Parmesan cheese if desired.
