Ingredients
– 1 kg beef chuck, cut into chunks
– 60 ml vegetable oil
– 1 onion, chopped
– 2 carrots, sliced
– 3 cloves garlic, minced
– 1 tablespoon tomato paste
– 500 ml beef broth
– 250 ml red wine
– 1 teaspoon dried thyme
– Salt and pepper to taste
Method
1. Heat the vegetable oil in a large pot over medium-high heat.
2. Add the beef chunks and brown them on all sides. This should take around 5 to 7 minutes.
3. Toss in the chopped onion, carrots, and minced garlic. Cook for about 3 minutes until the vegetables begin to soften.
4. Stir in the tomato paste, beef broth, red wine, and dried thyme. Bring the mixture to a boil.
5. Season with salt and pepper. Reduce the heat to low, cover the pot, and simmer for 2 to 2.5 hours until the beef is tender.
