Ingredients

– 1 turkey (about 4-5 kg)
– 200 g bone marrow, softened
– 250 g butter, room temperature
– 1 onion, chopped
– 2 carrots, chopped
– 3 garlic cloves, minced
– 1 bay leaf
– 500 ml chicken stock
– Salt, to taste
– Pepper, to taste

Method

1. Preheat the oven to 180°C.
2. Mix the softened bone marrow and butter together until well combined.
3. Rub the butter mixture all over the turkey, ensuring to cover the entire surface.
4. Place the turkey in a roasting pan with the chopped onion, carrots, minced garlic, and bay leaf.
5. Pour chicken stock into the pan and roast for about 2 to 2.5 hours, basting occasionally.
