Ingredients
500 g okra, trimmed and cut
1 medium onion, chopped
1 medium tomato, chopped
1 tsp mustard seeds
1 tsp cumin seeds
2 tsp turmeric powder
2 tsp tamarind paste
2 tsp jaggery or sugar
Salt, to taste
2 tbsp vegetable oil
Method
Heat the vegetable oil in a large pan over medium heat.
Add mustard seeds and cumin seeds to the hot oil.
Once they begin to pop, add the chopped onion and sauté until golden brown.
Stir in the tomato, turmeric powder, tamarind paste, jaggery, and salt. Cook for a few minutes.
Finally, add the okra, mix well, and let it cook for about 10 minutes until tender.
