Ingredients
- 1 cup of cornmeal
- 1 cup of all-purpose flour
- 1/4 cup of sugar
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 1 cup of milk
- 1/4 cup of vegetable oil
- 2 large eggs
- 1 cup of corn kernels (fresh or canned)
- Optional: 1/2 cup of shredded cheese
Method
- Preheat the oven to 200 degrees Celsius. Grease a baking dish or line it with baking paper.
- In a big bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the milk, vegetable oil, and eggs until combined.
- Pour the wet ingredients into the dry mixture and stir until just combined. Fold in the corn kernels and cheese if using.
- Pour the batter into the prepared dish and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
