Ingredients
2 cups basmati rice
4 cups water
1 tablespoon olive oil
1 teaspoon salt
1 onion, diced
2 garlic cloves, minced
1 teaspoon cumin seeds
1 carrot, grated
1 cup peas
Fresh coriander for garnish
Method
1. Rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch and prevents it from becoming sticky.
2. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until it becomes soft.
3. Stir in the minced garlic and cumin seeds. Cook for about one minute until fragrant.
4. Add rinsed rice and grated carrot to the pot. Mix well, then pour in the water and add salt. Bring to a boil.
5. Once boiling, reduce heat to low and cover. Cook for about 15 minutes or until the rice absorbs all the water. Fluff with a fork and mix in the peas. Garnish with fresh coriander.
