Ingredients
300 g pasta
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 zucchini, diced
1 red bell pepper, diced
400 g canned tomatoes
1 teaspoon dried oregano
200 g cheese, shredded
Salt and pepper to taste
Method
1. Start by cooking the pasta according to package instructions until it’s al dente. Drain it and set aside.
2. Heat the olive oil in a pan over medium heat. Add in the onion and garlic, cooking until they’re soft and fragrant.
3. Stir in the zucchini and bell pepper. Cook for another five minutes, until the vegetables are tender.
4. Add the canned tomatoes and oregano to the pan. Season with salt and pepper. Allow it to simmer for about 10 minutes.
5. Combine the cooked pasta with the vegetable mixture. Transfer everything to a baking dish, sprinkle cheese on top, and bake at 180°C for 20 minutes until golden brown.
