Ingredients
– 250 g orzo pasta
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 2 courgettes, sliced
– 400 ml diced tomatoes
– 1 teaspoon dried oregano
– 250 g mozzarella cheese, cubed
– 1/2 cup grated Parmesan cheese
– Salt and pepper to taste
Method
1. Preheat the oven to 200 degrees Celsius.
2. Heat olive oil in a large oven-safe pan over medium heat. Add onion and cook until soft.
3. Stir in garlic and courgettes, cooking for another 5 minutes, then add the orzo and mix well.
4. Pour in diced tomatoes and oregano, season with salt and pepper, and stir everything together.
5. Once combined, sprinkle mozzarella and Parmesan on top. Bake for 20 minutes or until cheese is bubbly and golden.
