Baked Eggs With Beans: A Delicious And Nutritious Recipe

Ingredients
400 g canned beans, drained
1 tbsp olive oil
1 onion, chopped
1 tsp garlic, minced
1 tsp smoked paprika
400 g canned tomatoes
4 eggs
Salt, to taste
Pepper, to taste
Fresh herbs, for garnish

Method
1. Preheat your oven to 200°C (400°F).
2. Heat olive oil in a large oven-safe skillet over medium heat.
3. Add chopped onion to the skillet and cook until soft. Stir in minced garlic and smoked paprika, cooking for an additional minute.
4. Pour in drained beans and canned tomatoes. Season with salt and pepper, then simmer for 5 minutes.
5. Make 4 small wells in the mixture and crack an egg into each one. Transfer the skillet to the oven and bake for about 10 minutes or until the eggs are set.
