Bacon Potato Salad Recipe
Ingredients
1 kg potatoes
4 strips of bacon
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped green onions
1/4 cup diced celery
1 tablespoon Dijon mustard
Salt and pepper, to taste
1 tablespoon apple cider vinegar
Method
Start by boiling the potatoes in salted water until soft, about 15 minutes.
While the potatoes cook, fry the bacon in a pan until crispy. Drain the bacon on paper towels and let it cool.
Once potatoes are cool, chop them into bite-sized pieces and place them in a large bowl.
Crumble the bacon and add it to the bowl along with the green onions, celery, mayonnaise, sour cream, mustard, vinegar, salt and pepper.
Mix everything together gently until well combined.
