Authentic Rajasthani Dal Baati Churma Recipe For A Festive Feast

Ingredients

  • 1 cup yellow split peas (dal)
  • 1 teaspoon turmeric powder
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons cooking oil
  • 1 teaspoon cumin seeds
  • 1 tablespoon coriander powder
  • 2 cups whole wheat flour
  • 1/2 cup melted ghee or butter
  • 1/4 cup sugar
  • 1/4 cup milk

Method

  1. Start by rinsing the yellow split peas in cold water. Cook them in a pot with 3 cups of water and turmeric powder until they are soft.
  2. In another pan, heat oil. Add cumin seeds, then the ginger-garlic paste. Fry until fragrant. Stir in cooked dal, coriander powder, salt, and mix well. Cook for a few minutes.
  3. For the dough, mix whole wheat flour and a pinch of salt in a bowl. Gradually add melted ghee and milk to form a firm dough. Knead for a few minutes.
  4. Divide the dough into small balls and flatten slightly. Bake them in an oven preheated to 200°C (400°F) until golden brown.
  5. Prepare the churma by grinding baked baatis with sugar. Serve together with dal for a complete meal.
