Authentic Konkani Alsande Randayi: Black Eyed Beans & Yam Gravy

Ingredients

– 1 cup black-eyed beans
– 200 g yam, peeled and diced
– 2 tablespoons oil
– 1 teaspoon mustard seeds
– 1 onion, finely chopped
– 2 green chilies, slit
– 1 teaspoon grated ginger
– 1 teaspoon turmeric powder
– 400 ml coconut milk
– Salt to taste

Method

1. Soak the black-eyed beans in water overnight.
2. Cook the soaked beans in fresh water until tender.
3. Heat oil in a pan over medium heat and add mustard seeds.
4. When the seeds pop, stir in onions, chilies, and ginger. Cook until onions are soft.
5. Mix in cooked beans, yam, turmeric, coconut milk, and salt. Simmer until yam is tender.
