Authentic Kerala Vendakka Stew Recipe: Delicious Okra Delight

Ingredients
2 cups okra, sliced
1 cup coconut milk
1 medium onion, chopped
1 medium tomato, diced
1 teaspoon ginger, minced
1 teaspoon garlic, minced
1 teaspoon mustard seeds
1 tablespoon vegetable oil
Salt, to taste
1-2 green chilies, slit

Method
Heat the oil in a pan over medium heat.
Add mustard seeds and wait until they pop.
Next, stir in onions, green chilies, ginger, and garlic. Cook until onions are soft.
Add diced tomatoes and sliced okra. Mix gently and cook for a few minutes.
Pour in the coconut milk, season with salt, and let it simmer for 10 minutes.
