Ingredients
– 1 kg chicken thighs (skinless and boneless)
– 2 tablespoons olive oil
– 1 onion (chopped)
– 3 garlic cloves (minced)
– 1 tablespoon fresh ginger (grated)
– 2 tablespoons curry powder
– 400 ml coconut milk
– 1 tablespoon soy sauce
– 1 cup chicken stock
– 1 red bell pepper (sliced)
Method
1. Heat olive oil in a large pan over medium heat.
2. Add chopped onion and cook until it becomes soft.
3. Stir in minced garlic, grated ginger, and curry powder. Cook for 1 minute.
4. Add chicken thighs and brown them for about 5 minutes on each side.
5. Pour in coconut milk, soy sauce, chicken stock, and sliced bell pepper. Simmer for 25 minutes until the chicken is cooked through.
