Ingredients
– 1 cup cauliflower florets

Method
1. Begin by washing all the vegetables. Cut the cauliflower into small pieces, slice the carrots and celery, and chop the red bell pepper.
2. Combine the cauliflower, carrots, celery, red bell pepper, and olives in a large mixing bowl.
3. Sprinkle the salt, oregano, and black pepper over the vegetables, mixing them well to coat.
4. In a separate bowl, whisk the vinegar and olive oil together. Pour this mixture over the vegetables and stir until everything is evenly coated.
5. Store the mixture in a clean jar or container. Let it sit in the fridge for at least 24 hours before serving to enhance the flavors.
