Authentic Basbousa Recipe: Deliciously Sweet Semolina Cake

Ingredients

– 1 cup fine semolina
– 1 cup plain yogurt
– 1 cup sugar
– ½ cup melted butter
– 1 tsp baking powder
– 1 tsp vanilla extract
– ¼ cup blanched almonds (for topping)
– 1 cup water (for syrup)
– 1 cup sugar (for syrup)
– 1 tsp lemon juice (for syrup)

Method

1. Preheat the oven to 180°C (350°F). Grease a square baking dish with some butter.
2. Mix the semolina, yogurt, sugar, melted butter, baking powder, and vanilla in a large bowl until smooth.
3. Pour the batter into the prepared baking dish and smooth the top. Use a knife to create diamond shapes on the surface.
4. Place an almond in the center of each diamond shape. Bake for about 30-35 minutes until golden brown.
5. While the cake bakes, prepare the syrup by combining water and sugar in a saucepan. Add lemon juice. Boil for about 10 minutes, then let it cool. Once the cake is out of the oven, pour the cooled syrup over it.
