Ingredients
– 2 cups basmati rice
– 4 cups water
– 1 medium onion, sliced
– 1/2 cup sugar
– 1/2 cup milk
– 1/4 cup ghee or clarified butter
– 1/2 cup mixed dried fruits, like raisins and cashews
– 1/2 teaspoon cardamom powder
– 1/4 teaspoon saffron strands (optional)
– 1/4 teaspoon salt
Method
1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.
2. Heat ghee in a large pot over medium heat. Add sliced onions and sauté until they turn golden brown.
3. Add the soaked rice to the pot and sauté for a few minutes. Stir in water, sugar, milk, salt, saffron (if using), and cardamom powder.
4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15 minutes until the rice is cooked and the liquid is absorbed.
5. Gently fluff the rice with a fork. Mix in dried fruits and serve warm.
