Ingredients

– 2 cups vegetable broth

Method
1. Rinse the rice under cold water until the water runs clear.
2. Heat olive oil in a large pot over medium heat. Add the onion and garlic. Cook until the onion is soft.
3. Stir in the mixed vegetables. Cook for about 5 minutes, stirring occasionally.
4. Add the rice, vegetable broth, dried herbs, salt, and pepper. Bring the mixture to a boil.
5. Once boiling, reduce the heat to low. Cover and simmer for 20 minutes or until the rice is tender and the liquid is absorbed. Garnish with parsley before serving.
