Ingredients
– 1 cup of sugar
– 4 cups of water
– 4 bags of black or green tea
– 1 cup of plain kombucha (from a shop)
– 1 SCOBY (symbiotic culture of bacteria and yeast)
Method
1. Boil the water in a pot. Once boiling, add the sugar and stir until it dissolves completely.
2. Add the tea bags to the hot sugar water and let it steep for about 15 minutes. Remove the tea bags and let the mixture cool to room temperature.
3. Pour the cooled tea into a large glass jar. Add the cup of kombucha to the jar.
4. Gently place the SCOBY on top of the mixture in the jar. Cover the jar with a clean cloth, secure it with a rubber band, and leave it in a warm, dark place for 7 to 14 days.
5. Taste the kombucha after a week. If it’s tangy enough for your liking, you can bottle it. Pour it into bottles, leaving a little space at the top, and store in the fridge.
