Ingredients

– 500 ml warm water
– 2 teaspoons active dry yeast
– 1 teaspoon sugar
– 800 g bread flour
– 2 teaspoons salt
– 150 ml active sourdough starter
– Extra flour for dusting
– Olive oil for greasing
– Sea salt for topping
– Cornmeal for baking

Method

1. Combine warm water, yeast, and sugar in a large bowl. Let it sit for about 5 minutes until foamy.
2. Add bread flour, salt, and sourdough starter to the mixture. Mix until a sticky dough forms.
3. Cover the bowl with a cloth and let it rest for about 4 hours at room temperature. The dough should double in size.
4. Dust a clean surface with flour. Gently turn the dough out and shape it into small rolls. Place them on a baking tray lined with cornmeal.
5. Preheat the oven to 220°C. Let the rolls rise for 30 minutes. Drizzle olive oil and sprinkle sea salt on top before baking for about 20 minutes until golden.
