Ingredients

– 2 cups heavy cream
– 1 cup milk
– ¾ cup sugar
– 2 teaspoons vanilla extract
– 2 ½ teaspoons gelatin powder
– 3 tablespoons cold water
– 1 cup sugar (for caramel)
– ¼ cup water (for caramel)
– Pinch of salt
– Chocolate shavings or fresh berries (for serving)

Method

1. Start by combining the cream, milk, ¾ cup of sugar, and vanilla extract in a saucepan over medium heat. Stir occasionally until the sugar dissolves and the mixture is warm, but do not let it boil.
2. In a small bowl, mix the gelatin powder with cold water. Allow it to sit for about 5 minutes until it becomes soft.
3. Pour the softened gelatin mixture into the warm cream mixture. Stir well until the gelatin fully dissolves. Remove from heat and let it cool slightly.
4. While the panna cotta cools, prepare the caramel. Combine 1 cup sugar and ¼ cup water in a saucepan. Cook over medium heat, swirling gently until it turns a golden brown color. Be careful not to burn it. Add a pinch of salt.
5. To serve, pour the panna cotta into cups and chill in the fridge for at least 4 hours. Once set, drizzle the caramel on top and add chocolate shavings or berries.
