Ingredients
– 1 cup of sugar
– 1 cup of milk
– 1 cup of orange juice
– 2 cups of plain flour
– 2 teaspoons of baking powder
– 1 teaspoon of vanilla extract
– 1/2 cup of butter, melted
– 2 eggs
– 1/2 cup of shredded coconut
– A pinch of salt
Method
1. Start by preheating your oven to 180 degrees Celsius. Grease a baking dish or line it with baking paper.
2. Mix together the sugar, melted butter, and vanilla extract in a large bowl. Stir until smooth.
3. Add the eggs, orange juice, and milk. Whisk until the mixture is well combined.
4. In another bowl, combine the plain flour, baking powder, shredded coconut, and salt. Gradually add this dry mix to the wet ingredients, stirring until just combined.
5. Pour the batter into the prepared baking dish. Bake for around 30-35 minutes, or until a toothpick comes out clean.
