Ingredients
– 1 ½ cups plain flour
– ½ cup sugar
– 2 teaspoons baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
– 1 cup milk
– 1 large egg
– 2 tablespoons melted butter
– 1 cup frozen mixed berries
– Powdered sugar for dusting
Method
1. Preheat your oven to 200°C (400°F) and prepare a muffin tray with liners.
2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix everything well.
3. Whisk the milk, egg, and melted butter together in a separate bowl. Pour this mixture into the dry ingredients and stir gently until just combined.
4. Carefully fold in the frozen mixed berries until they are evenly distributed. Be gentle to avoid breaking them apart.
5. Spoon the batter into the prepared muffin tray and bake for 15 to 20 minutes or until a toothpick inserted in the center comes out clean. Let them cool slightly before dusting with powdered sugar.
