Ingredients
– 1 cup of flour
– 1 cup of water
– 1 tablespoon of sugar
– 1 teaspoon of salt
– 1 teaspoon of baking powder
– 1 cup of mixed vegetables (frozen or fresh)
– 2 eggs
– 2 tablespoons of oil
– 1 teaspoon of soy sauce
– Optional: chopped herbs for garnish
Method
1. Begin by mixing the flour, baking powder, sugar, salt, and water in a large bowl. Stir until there are no lumps.
2. Heat a non-stick pan over medium heat and add oil.
3. Pour half of the batter into the hot pan, spreading it evenly across the surface.
4. Add the mixed vegetables and pour the remaining batter on top. Cook for about 5 minutes until the bottom is golden.
5. Flip the mixture carefully and cook for another 5 minutes. Drizzle with soy sauce and add eggs if desired. Serve hot.
