Ingredients
– 500g chicken breast, diced
– 1 cup frozen mixed vegetables

Method
1. Heat olive oil in a large pan over medium heat. Add minced garlic and ginger. Sauté until fragrant, about 1 minute.
2. Include diced chicken into the pan. Cook until the chicken is browned and cooked through.
3. Stir in the mixed vegetables. Allow them to cook for about 3 minutes.
4. Mix in rice, chicken broth, and soy sauce. Bring the mixture to a boil, then reduce the heat and cover. Cook for 15-20 minutes until rice is tender.
5. Drizzle with sesame oil and top with sliced green onions before serving.
