Ingredients
– 1 cup of rice
– 2 cups of water
– 1 tablespoon of oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 bell pepper, diced
– 1 zucchini, sliced
– 1 can (400g) of diced tomatoes
– 1 teaspoon of dried oregano
– Salt and pepper to taste
Method
1. Begin by rinsing the rice under cold water until the water runs clear.
2. In a pot, heat the oil over medium heat. Add the chopped onion and cook until it becomes soft.
3. Stir in the garlic, bell pepper, and zucchini. Cook for a few minutes until all the vegetables start to soften.
4. Add the rice, followed by the diced tomatoes, water, oregano, and salt and pepper. Bring the mixture to a boil.
5. Lower the heat, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
