Ingredients
– 2 cups cooked rice
– 1 cup frozen peas
– 2 eggs
– 3 tablespoons soy sauce
– 1 tablespoon vegetable oil
– 1 small onion, chopped
– 1 carrot, diced
– 2 green onions, sliced
– Salt, to taste
– Pepper, to taste
Method
1. Heat the vegetable oil in a large skillet over medium heat.
2. Add the chopped onion and diced carrot. Sauté until soft.
3. Push the veggies to one side and crack in the eggs. Scramble until fully cooked.
4. Stir in the rice, frozen peas, soy sauce, salt, and pepper. Mix well and cook for about 5 minutes.
5. Garnish with sliced green onions before serving.
