Ingredients

– 1 cup uncooked white rice
– 2 cups water
– 1 tablespoon olive oil
– 1 teaspoon salt
– 1 lemon, zested and juiced
– 1/4 cup chopped fresh parsley
– 1/4 teaspoon black pepper
– 1/4 teaspoon turmeric (optional)
– 1/4 cup chopped green onions
– 1/4 cup peas (frozen or fresh)

Method

1. Rinse the rice under cold water until the water runs clear.
2. In a pot, combine the rice, water, olive oil, and salt. Bring to a boil over high heat.
3. Once boiling, reduce the heat to low. Cover the pot and let it simmer for 15 minutes or until all the water is absorbed.
4. Remove the pot from heat. Let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the lemon zest, lemon juice, parsley, pepper, turmeric, green onions, and peas.
5. Serve warm as a side dish.
