Ingredients
200 g ground almonds
100 g ground pistachios
200 g sugar
4 eggs
200 ml olive oil
1 tsp vanilla extract
1 tsp baking powder
Zest of 1 lemon
Pinch of salt
Icing sugar for dusting
Method
Preheat your oven to 180°C (350°F). Grease and line a cake pan with baking paper.
In a large bowl, combine ground almonds, ground pistachios, sugar, baking powder, and salt. Mix these ingredients well.
Add eggs, olive oil, vanilla extract, and lemon zest. Whisk everything together until the batter is smooth.
Pour the batter into the prepared cake pan. Bake for 30 to 35 minutes or until a toothpick comes out clean.
Let the cake cool for 10 minutes before transferring it to a wire rack. Dust with icing sugar before serving.
