Ingredients
– 1 ¾ cups plain flour
– 1 ¾ cups sugar
– ¾ cup cocoa powder
– 1 ½ teaspoons baking powder
– 1 ½ teaspoons baking soda
– 1 teaspoon salt
– 2 large eggs
– 1 cup milk
– ½ cup vegetable oil
– 2 teaspoons vanilla extract
– 1 cup boiling water
Method
1. Preheat your oven to 180 degrees Celsius. Grease and flour two 20 cm round cake pans.
2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk everything together until well mixed.
3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat the mixture on medium speed for 2 minutes.
4. Stir in the boiling water until smooth. The batter will be quite thin, which is normal.
5. Pour the batter evenly into the prepared pans. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
