Cheesecake Cookie Bars Recipe
Ingredients
225 g digestive biscuits, crushed
120 g unsalted butter, melted
500 g cream cheese, softened
150 g sugar
1 tsp vanilla extract
2 large eggs
60 ml sour cream
60 ml fresh lemon juice
80 g chocolate chips or berries (optional)
Method
1. Preheat the oven to 180 degrees Celsius. Grease a baking dish.
2. Combine the crushed digestive biscuits with melted butter in a bowl. Press this mixture firmly into the bottom of the baking dish.
3. Beat softened cream cheese with sugar and vanilla extract in a separate bowl until smooth. Add eggs, one at a time, mixing well after each addition.
4. Stir in sour cream and lemon juice until everything is well combined. If desired, fold in chocolate chips or berries.
5. Pour the cream cheese mixture over the crust and spread it evenly. Bake for about 30 minutes or until set.
