Ingredients
125 g unsalted butter, softened
1 cup white sugar
2 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 cup fresh blackberries
Method
1. Preheat your oven to 180 °C (350 °F). Grease and line an 8-inch round cake pan with baking paper.
2. Beat the softened butter and sugar together in a mixing bowl until the mixture is light and fluffy.
3. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
4. Combine the flour, baking powder, and salt in another bowl. Gradually add this dry mixture and the milk to the wet mixture, stirring until just blended. Gently fold in the blackberries.
5. Pour the batter into the prepared cake pan. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
