Ingredients
200 g digestive biscuits
100 g unsalted butter, melted
500 g cream cheese
1 cup sugar
1 cup pumpkin puree
2 large eggs
1/4 cup bourbon
1 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp ground nutmeg

Method
Prepare an oven-safe dish by greasing it lightly.
Crush the digestive biscuits in a bowl and mix them with the melted butter.
Press the biscuit mixture evenly into the bottom of the dish to form a crust.
Combine the cream cheese, sugar, pumpkin puree, eggs, bourbon, vanilla, cinnamon, and nutmeg in a mixing bowl.
Pour the filling over the crust and bake at 180°C for about 50 minutes or until set.
