Ingredients
300 g chicken breast, diced
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, diced
400 g canned diced tomatoes
1 teaspoon dried oregano
1 teaspoon smoked paprika
2 cups cooked rice
Salt and pepper to taste
Method
Heat the olive oil in a large skillet over medium heat.
Add the onion and garlic, cooking until they are soft.
Stir in the chicken pieces and cook until browned.
Mix in the bell pepper, diced tomatoes, oregano, paprika, salt, and pepper.
Simmer for 15 minutes, then serve over cooked rice.
