Ingredients

1 cup berry jam
250 g mascarpone cheese

Method

1. Combine flour, milk, eggs, sugar, and salt in a large bowl. Whisk until the mixture is smooth.
2. Stir in the melted butter. Allow the batter to rest for about 30 minutes.
3. Heat a non-stick skillet over medium heat. Pour in about 1/4 cup of batter and swirl it around to form a thin pancake. Cook for 1-2 minutes until golden brown, then flip and cook the other side.
4. Repeat this process to make more crepes, stacking them on a plate as you finish.
5. Spread a layer of mascarpone cheese and a layer of berry jam between each crepe. Top the cake with fresh berries before serving.
