Ingredients
250 g ricotta cheese
1 cup sugar
2 large eggs
1 cup lemon juice
Zest of 2 lemons
1 cup all-purpose flour
1 tsp baking powder
1/2 cup vegetable oil
1/2 tsp salt
Powdered sugar for dusting
Method
Preheat the oven to 180°C. Grease and flour a round cake pan.
Mix ricotta cheese and sugar in a bowl until smooth.
Add eggs, lemon juice, lemon zest, and vegetable oil. Stir to combine.
In another bowl, combine flour, baking powder, and salt. Gradually mix this dry blend into the wet ingredients until just combined.
Pour the batter into the prepared pan and bake for about 45 minutes or until a toothpick comes out clean.
